I recently discovered pompous that my nephews were bitten crusts makers. A family vacation, they asked for their breakfast (it's true that it is also good in the morning!). With a funny name and a color that has nothing to do with the taste, I offer my version crusts makers in their purest tradition.
Ground almonds 450g caster sugar 400g white 250g egg 1.5 teaspoon almond extract liquid (or vanilla or orange blossom or green tea matcha) green dye ( yellow + blue) icing sugar for decoration
Put another sheet on the dough and spread pompous it with a rolling pin to a thickness of about 2-3mm. This way, it does not add extra flour and work plan and roller clean.
Also pour the green dye. This is optional of course, but the crust is always curiously green tea! I put blue and yellow liquid, but if you have a green dye powder, it will be perfect!
